Siyempre, KILIG. The crew are beside themselves. :) Manny Pacquiao was in Cebu (Mactan) yesterday to film an episode of “Manny Many Prizes” and we got a day’s notice to please prepare a “pre-filming meal” or what was tantamount to a merienda cena for roughly a dozen people or so, on site. Only twist is, the Champ avoids pork, and requested we send a chicken tinola instead of lechon, and any other dishes we thought he might enjoy. I wasn’t able to get to Cebu quick enough, so I sent recipes over the net and our chefs did a classic chicken tinola in a palayok, the old-fashioned way with plump free-range chickens and rice washings… :) I understand he enjoyed that soup immensely, and nothing was left in the palayoks! We also sent some bangus and monggo without chicharon toppings and that was all wiped out as well. It was a bit of a zoo, and our crew were unable to get a snapshot with Manny, but they are thrilled nonetheless. They thought they were done, but after the merienda, the Pacquiao contingent decided to order more dishes for a late post-show meal as well! So twice in one day Zubufood (though not Zubuchon) was on the Pacquiao menu… :)

…no chicken binakol and/or MM’s Kinilaw?
bettyq, would have loved to send binakol, but TINOLA was underlined. :) And if I was there, I would have definitely sent kinilaw, but would have to cut it myself, minutes before it was served… I now store dayap in my freezer all year round, so I can add dayap rind and that distinct flavor to whatever I am cooking when required… :)

By the way, my colleagues are currently attending the Philippine Cable Television Association (PCTA) Convention at Raddison Blu Hotel. I told them to eat at Zubuchon at least one meal as it was highly recommended by yours truly. :)
They had dinner last Tuesday at your branch in Mango Avenue (?) and they were all thankful that I suggested Zubuchon. Busog na busog daw sila and gusto pa nila bumalik but their schedules doesn’t permit them anymore.
But……..I am excited sa binilin kong Zubuchon Chicharon! Can’t wait to see them tomorrow!
Hi MM, you mentioned plump free range chickens. Where do you get them? I bought organic free range chickens from several suppliers, and they are all very very thin! Was wondering where I can get plump ones.

Gigi, Magnolia has this new line of “free range chickens” — probably not truly organic, just literally allowed to run around outside for some of the day… but they are pretty good and I like to use them for special occasion dishes… They aren’t as flavorful nor as tough as the native chickens…
