I am in Cebu and UTTERLY CRAZED at the moment. Besides the Ironman Race on Sunday, for which 1,700 participants and perhaps 15,000 visitors are expected in Metro Cebu and Mactan, I have a couple of other important “events” to attend to. Several blog readers who are participating in the race, and their friends and family are indicating that they might be dropping by Zubuchon outlets for some lechon over the next few days, so here are some suggestions so that we can handle any surge in traffic as best as possible…
First of all, thank you to the organizers of the race, who I do not know personally, who have placed an order for 35 whole lechons for race day, apparently to help feed organizers and volunteers… yipes, that’s 35 whole lechons for an early morning delivery time! :)
Where can participants and guests get some Zubuchon? If you are staying on Mactan island, the closest outlet, but also most likely to be swamped with guests is located at the ground floor of the Islands Stay Hotel just a minute or two from the Mactan airport. It can only seat 30-35 people, and the hotel is fully booked, so it could be quite full. The Mango Avenue branch is the largest, but still small at a total of 80 seats, but it has the most extensive menu. If you happen to be in the city checking out the route or sightseeing, I strongly recommend this outlet. Another small restaurant is located on Escario Street, near the Provincial Capitol, with say 24 seats. Here is branch location and contact information. Please note that we DO NOT take any reservations on Fridays, Saturdays and Sundays during peak meal times.

Many folks have sent emails, texts and called to find out about bringing home some lechon/chicharon as bitbit, pasalubongs, etc. While we have an outlet in the Mactan Domestic Departure lounge, predicting demand on weekends such as this is extremely difficult. So to ensure that you have some lechon/chicharon set aside, please, please, please call us at least a day ahead to reserve some lechon for you to take home with you… Many major roads are shut down on Sunday, August 5th, so we expect massive disruptions to transport of lechons to Mactan and the airport… so please reserve early to ensure we can meet your requirements. Wahh…. ang layo ko….but I know.. someday (dreaming) magkakaron nito sa Manila. Or siguro on my next Pinas Trip, since sa NAIA 3 ang bagsak ko, I will order ahead of time ng frozen to go, so pagdating ko sa airport, daanan ko na ito.
Ayy, MM, sigurado na maraming madaragdag na Zubuchon afficionados. Tawagin ko kayang ‘ZUBUNADOS” ang mga taong fans ng iyong restaurant.?
I hope the weather gods smile on the athletes! But then again, that’s why it is called Ironman…

I am so happy I finally live in Cebu, so I do not have to fight the crowds for Zubuchon…think I will go on Monday when all is calm! Good luck MM, sounds like a busy weekend, but as always you will prevail.
Another triathlon I am going to miss, friend of mine signed up for it months ago, but won’t be there to cheer him, MM and the Crew, on (sigh, I miss CEB).
Oh well, at least he gets to partake in the 35 lechons, and I hope he remembers to bring me back some zubuchon (since missing this Ironman does count as an incident requiring comfort food… )
Incidentally, I heard this is the last year of the current Ironman franchise.
It would be great to have some lechon and chicharon waiting at the finish line so that when the cameras click, it would appear that the ironmen were all in a mad dash for the pork. Nag-uunahan makakuha ng lechon! Hehe… Best of luck to you and your crew, MM!

Trin, our apologies, a city wide brownout in Cebu killed electricity for two hours this morning, disrupting cooking schedules. For store bound lechons, we use an electric rotary turner to help turn bamboo poles… and that died. For whole orders, we still do everything by hand… So the brownout resulted in a 1 hour delay in cooking as staff scrambled to adjust to both whole orders and store bound lechons. I hope we don’t have any more blackouts this weekend! :(

I am flying SG-MNL tomorrow for a short break and squeezed in an overnight trip to Cebu on Wed-Thurs just to finally get a taste of Zubuchon and all the delicious dishes described here! I am hoping that you and your readers could give some tips on where to go, what to do, and other food places to visit (of course after getting my fill of Zubuchon) during my short stay there. As it is just a 2 day trip I would like to make the best out of it! Looking forward to some ZUBUBLISS!

Dear Marketman,
Thought you should know that I have been craving for Zubuchon since you first wrote about it. Now that I am finally here in Cebu, the first thing I told the driver was: Alam niyo ho ba yung Zubuchon? He replied “Oho, Ma’am. Lahat ng drinadrivan ko, yun yung hinihiling nila.”
When I got to the hotel, I was glad that my room hotel was not ready, and I immediately jumped into the car, and asked to be brought to Zubuchon immediately.
I got so excited, and then suddenly wondered if I was setting myself up for disappointment. What if the lechon is good enough, but I hyped it up so much in my head, that my expectations are ridiculously high?
Just to cut the story short, Marketman, the lechon is everything and more!!!!!! All the hype and totally exceeded my expectations!!!!!
From the crispy skin, to the meat, to the fat, to the EVERYTHING! I wonder why there’s a bottle of vinegar, soysauce and oil on the table. Is it for decor? Because surely, no one in their right mind would bother putting some on the lechon, it’s perfect as it is!
And the Santol juice? Sublime.
My only gripe is that the waiter was err, a little “Judgemental.” Hahaha. I’m a solo traveler, and I wanted to order as much as I can. So, I ordered the Pork Rice, with the lechon. She said “Pang 3-4 servings ho yung kanin.” I nodded, meaning, okay, yes, I’ll eat them all, if I can’t finish, I’ll take it home. But then she still insisted, and said “marami ho yon.” Okay, fine! I’m a pig! So, I just ended up ordering a cup of white rice.

victoria, OMG, I am laughing but mortified at the same time. Staff are meant to be helpful, not judgmental! :) We often find that guests find our servings very ample, and have lots of food leftover… hence what was meant to be a friendly warning, I am sure. I am in Cebu at the moment, so will try to drop by the Mango Avenue store this evening and perhaps run into you. I say give the menu a real test and order anything you want. :) Also, for dishes like dinuguan, monggo, adobo, paksiw, prtichon, etc. there are fast meals… so you may wish to try several of those so you don’t have to order a whole platter of each dish. Be sure to try the biko and turon. And a kamias shake. Thanks for visiting the restaurant!

No wonder the waiters were extra nice! Hahaha. I was joking awhile ago regarding the “judgmental” waitress, though I admit, I felt conscious for ordering so much. :-) Yes, of course, she was being helpful. :-)
I tried the Kamias shake, utterly refreshing, and the biko, wow, the muscovado sugar on top nailed it. I ended up still ordering lechon, though. (I figured if the cholesterol was going to kill me, I might as well go down happy. Hehehe) I couldn’t stop taking photos and sending it back home to my brother and sisters via imessage. I promised them I’d buy at the airport when I go back to Manila tomorrow.
It would have been awesome had I met you. Wysgal and Fabian are my very close friends, and it’s a shame I never met you. (I was in NY when the Cebu Lechon eyeball happened), though I did meet you briefly, during an Alumni event in Salon de Ning a year ago I think. :-) I was the one who approached you and said that I read your blog. You probably don’t remember, but that’s okay.

Zubuchon fan forever
hey MM, was in Cebu for the Ironman, I joined the relay but aside from that I was excited to try Zubuchon! my friends and I dined at the Mactan Branch last Monday, I wanted to try everything on the menu but I guess I need more visits to do that. I really liked the mongo with zubuchon as well as the dinuguan..and the duhat shake was like eating many, many duhat at the same time! it was refreshing, too bad the kamias shake ran out when we ordered. we were even joking if how does your team get the seeds off and laughing our hearts out at gross suggestions which i think your team do not do :D however, the zubuchon i ate was not as tasty as i imagined :( good thing, we took home a couple of kilos and boy was it good compared to what i had at the store! the skin was still crispy even when i placed it on the fridge and the meat tasted of the spices, really yummy!
